Taylor’s Graduate Wins 4th Nestlé Golden Chef Hat Award 2008

Ling Jenn Joe, 26, a Diploma in Culinary Arts graduate from Taylor’s College, School of Hospitality and Tourism (TCHT), outcooked 25 other chefs from all over Malaysia to emerge champion in the prestigious 4th Nestlé Golden Chef Hat Award 2008.
Jointly organised by Nestlé Professional, Chefs Association of Malaysia and TCHT, the competition is open to Malaysian citizens below 28 years of age. It provides ambitious and creative young Malaysian chefs with the unique opportunity to showcase their talents and creativity to top industry professionals; opening new frontiers for them to become the country’s next generation of exemplary chefs.
The young professionals competing for the Golden Chef Hat Award began by proposing a written menu comprising of an appetiser, soup, main course and dessert. Twenty-six finalists were short-listed for the final round of competition, where they had 3 ½ hours to complete the menu they created. Contestants were judged by a panel of seven foreign and local chefs.
Jenn Joe’s winning dishes were: Poached Duck Breast with Spinach, Prawn Ravioli, Vegetable Stew and Zucchini Puree; Cream of Mushroom, Garlic Espuma and Herb Crouton; Slow Roast Beef with Glazed Asparagus, Potato Gratin, Beef Jus and Black Pepper Foam; and Warm Flourless Chocolate Cake with Raspberry Ice-cream, Apple Compote and Almond Florentine.
“I designed a menu which comprised dishes that I’ve cooked before and really enjoy eating so that others will appreciate my cooking as well,” Jenn Joe explained.

He added: “It was a tough competition, especially going up against so many of my talented peers in the industry. I’m glad that I was successful in showcasing my talents and capabilities to win the competition.”
Jenn Joe, who is currently a Commis 2 at The Westin Kuala Lumpur, walked away with a cash prize of RM6,000 and a challenge trophy.
Pradeep Nair, Taylor’s College Chief Operating Officer, commended Jenn Joe for his outstanding achievement as a professional.
“He certainly exemplifies the quality of our graduates, proves the value of a Taylor’s education and serves as an inspiration for many budding chefs at TCHT,” Pradeep said.
The 4th Nestlé Golden Chef Hat Award 2008 attracted the highest number of entries since its inception in 1994, with over 270 entries from hotels, colleges, hospitals, catering companies and eateries across Malaysia.
